Stakanje: made of potatoes, courgettes and tegoline (a variety of bean) seasoned with pork fat, garlic and vinegar. It was once a late summer dish of the potato-lifting season when the other ingredients were coming to an end, the tegoline becoming too fibrous and the courgettes too large and watery to be used in any other manner.
